Nutritional policy design: Behavioral insights from the lab to the field
Winter Workshop
Objectives
The course introduces key experimental tools in behavioral economics—such as willingness to pay,
experimental auctions, and social norm elicitation— to study food choices and design effective nutritional policies.
Drawing on research from GAEL and INRAE, it combines theory with hands-on classroom experiments to explore how behavioral insights can inform public policy design and evaluation.
