Workshop<br>Objectives<br>The course introduces key experimental tools in behavioral economics\u2014such as willingness to pay,<br>experimental auctions, and social norm elicitation\u2014 to study food choices and design effective nutritional policies.<br>Drawing on research from GAEL and INRAE, it combines theory with hands-on classroom experiments to explore how behavioral insights can inform
